Sugar Free One Minute Muffins

Ingredients

        1/2 cup flax meal
        2 eggs or eggs sub.
        1 small apple skin on (chopped fine)-more fiber
        2 teaspoon baking powder
        2 teaspoon oil or butter your choice
        2 teaspoon cinnamon or more if you like

      1 tablespoon splenda or other sweetner more or less if you like

Directions

Mix flax meal, cinnamon, sugar, baking powder in small bowl. Then add chopped apple and stir well, add eggs, and oil -or butter stir with spoon till mixed. I use a silicone muffin pan fill 3/4 full and then pop them into mirowave for 1 to 2 minutes until not wet on top.  Turn onto cooling rack.NOTE: you can half this recipe and use a coffee cup or bowl or any dish you want . Adjusting the cooking time. These cool fast full of fiber low carb gluten free and if you don’t like apples let them out, my hubby loves raisians
in his. You could expermint with other fruits just adjust the cooking time,also the calories !!!!!:)
