60 second chocolate fix. NOT DIET.

UPDATE ON THIS RECIPE: I read the comments AFTER I posted it and found that most people had to add more sugar and some a little more chocolate to achieve an actual “tasty” result.  SO there’s your warning.  I’d stick a finger in the batter before cooking it the first time.  If it sucks before it’s cooked, odds are it will afterwards!

3 Ingredients, 60 Seconds: Gooey Chocolate Mug Cake

It’s Monday.  You don’t have time for chocolate, right?  Wrongo.  No matter what
time of the day your chocolate craving hits, you’re just 55 seconds and three
ingredients away from your own, personal mug full of the richest, chocolatiest
hunk of cake ever.  Created one afternoon while in the fits of a crazy-mad
chocolate craving, I attempted to mix togther the three vital ingredients for my
favorite Chocolate Lava Cake, popped it in the microwave, and had my kids
drooling all the ‘miracle mug’ one minute later.   It cooked up thick and full
of deep chocolate flavor.  It made the kitchen smell divine.  So, I shared that
first mug.  But, later, when the kids were tucked to sleep, I  mixed together
another mug and ate it while watching the Bachelorette.  I might have done it
the next night.  And the night after that, too.   I might still be doing it.
Because, seriously.  Three ingredients, sixty seconds.  Who doesn’t have time
for chocolate cake when chocolate cake is that quick, easy,
and scrumptious?!

Gooey Chocolate Mug Cake

1 egg

1/4 c. powdered sugar

1-2 Tbsp. cocoa powder (depending on how chocolatey you want your cake)

1 standard-sized mug

In mug, crack egg, add powdered sugar and cocoa powder.  Whisk together with
a small whisk until well mixed.  Microwave for 50-60 seconds, until the cake is
cooked through (but not overcooked!)  Top immediately with a handful of milk
chocolate chips, hot fudge, whipped cream, or ice cream.  For PURE BLISS, my
kids and I particularly love to pour several tablespoons of heavy whipping cream
over the cake, then eat it with a spoon.  Divine!
